Mint Chocolate Chip Cupcakes
I really like these cupcakes.
The consistency of the batter was different than others I've made. Was it the baking powder? Was it the european butter? Was it the melted chocolate? The chocolate milk? Everything came together so well. When I put the batter into the liners with the scooper, it formed this perfect little domed scoop.
The cupcakes took the whole 20 minutes to cook. When they came out of the oven, they were perfectly puffy.
The frosting is good but it reminds me of toothpaste. Maybe the frosting doesn't really need the mint extract. Maybe I should have spiked it with Bailey's Irish Cream (although I couldn't have taken the leftovers to work).
I think they would have looked better (and less like toothpaste) if I had remembered to buy green food coloring. The green sparkles are just a little too Crest-like. The chocolate chips on the top are absolutely necessary.
I wonder what other cupcakes call for chocolate milk? I love the idea.
